I discovered the muffle at the Fremantle markets in Western Australia. The small store that sells muffles is Muffle & Co which I found out has a few stores across the world. Using a waffle-like maker with deep semi-circles rather than squares, staff pour the batter over and it only takes about a minute for a freshly made muffle to be made – similar to the Hong Kong egg waffle.
Muffle & Co had 9 dessert muffles on offer with flavours such as cheesecake, banoffee and strawberry. There was also a breakfast muffle with bircher cereal and a savoury lunch muffle option with smoked salmon. Muffles are between $10-12 depending on the flavour.
I was there for a dessert muffle and couldn’t go past the Daifuku filled with matcha ice cream, red bean, mochi and strawberries ($12). There was no queue when I got there, but as soon as I ordered, there was a huge crowd around me! The freshly made muffle is shaped into a cone before being placed inside a cardboard cone to prevent sticky fingers. I watched as the muffle was made with a spoonful of red bean inserted first, two scoops of matcha ice cream, more red bean, then decorated with freshly cut strawberries.
The muffle was amazingly soft while having a slight elasticity to the dough that still made it easy to chew. I’m told that the mochi in the Daifuku is baked into the muffle dough so that must have attributed to the delicious chewy dough. Matcha and red bean work so well together so I thought it was a great combination of flavours. The serving size is HUGE and the muffle is a meal in itself. You could share but it can get messy. A spoon is provided to scoop out the ice cream. I would do this as soon as possible as the ice cream started to leak out of the bottom of the cardboard cone. Service is friendly and quick, and you can watch everything being made right in front of you. I’ll definitely go back to try some more flavours the next time I’m in Fremantle.
